Dad will cater the lunch?

My son Stephen is now a Financial Advisor in Port Townsend, Washington with Edward Jones Investments.  He recently called me with a challenge, he had signed up as a sponsor for the Centrum Jazz Festival and had several tickets to give to clients.  I suggested that he hand pick a few clients and  invite them to invite another couple or two as his guest.  I then suggested that he might want to do a lunch prior to the concert allowing his guest to mingle and get to know each other.  Stephen called back a few days later requesting that I cater it.

So here was the way I looked at this food challenge, come up with a menu that will wow guest who live in a 'foodie' town that host a list of great places to dine at.

Sandwich number 1:
Grilled Chicken
Munster Cheese
Pesto Sauce




Sandwich number 2:
Seared Ahi Tuna
Wasabi Mayo spread
Avocado
Cucumber
Bean Sprouts





Sandwich number 3:
Soy Sauteed  Peppers
Red Onion
Papaya
Apricot Jam







Accompanied by:
Watermelon and Basil Salad and 7 Bean Salad

All this served with wine on white table clothes.
